ST. PAUL, MN – After the last plate of turkey is cleared from the table and the dishes are piled high in the sink, thereâs one thing Jack and I always look forward to: his amazing turkey tacos. Iâll be honestâthose tacos have become a tradition in our house. Every year, after Thanksgiving dinner, we take all the leftover turkey and transform it into something exciting. It’s the perfect way to wrap up the holidayâand maybe even outshine the feast we just had. And weâre not the only ones! Thanksgiving leftovers aren’t just food; theyâve become an opportunity to create new memories and share meals that bring family together in a fresh way.
If youâre looking for ways to turn your leftovers into something more than just a reheated meal, here are a few creative recipes that could become your new family traditions, too.
Leftover Turkey â A Versatile Hero
Turkey is the star of Thanksgiving, and itâs just as much a star in the days that follow. Itâs so easy to transform into something completely different. Here are three of my favorites:
Turkey Tacos
This recipe is a Jack original, and itâs one we canât get enough of! Hereâs how we do it:
Ingredients:
- 2 cups of leftover turkey (shredded or chopped)
- 1 tablespoon olive oil
- 1 packet taco seasoning (or homemade seasoning)
- ½ cup chicken broth (or turkey broth, if youâve got it!)
- 8 small soft tortillas
- Toppings: Shredded lettuce, diced tomatoes, sour cream, shredded cheese, salsa, and chopped cilantro
Instructions:
- In a pan, heat olive oil over medium heat.
- Add the shredded turkey to the pan and sautĂŠ for 2-3 minutes until it’s warmed through.
- Stir in the taco seasoning and chicken broth, and let it simmer for about 5 minutes until the turkey is well-coated in the seasoning and the broth has mostly absorbed.
- Warm your tortillas in a separate pan or microwave.
- Assemble the tacos by adding the turkey mixture to each tortilla, then top with your favorite taco toppings. Enjoy!
Turkey Soup or Stew
A warm, comforting soup is a great way to use up turkey and leftover veggies from Thanksgiving dinner.

- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken or turkey broth

- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup of leftover mashed potatoes (optional for a creamier soup)
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery. Cook for about 5-7 minutes until softened.
- Add the turkey broth and bring to a simmer.
- Stir in the turkey, mashed potatoes (if using), garlic powder, thyme, salt, and pepper. Let the soup simmer for another 10-15 minutes.
- Adjust seasoning to taste and garnish with fresh parsley. Serve hot.
