PROVIDENCE, RI — Now here’s a diet plan that actually sounds tasty! A digital content producer from Rhode Island says he transformed his health by sticking to a single fast-food meal every day for over a year—and it came from Chick-fil-A.

Wake-Up Call on the Scale

Tom Carroll, who stands 6 feet 2 inches tall, faced a harsh reality in July 2023 when a scale at a wedding in Syracuse flashed the number 360. It was the first time he’d weighed himself in nearly four years. The moment became the launchpad for a drastic health turnaround. At 34, Carroll was carrying dangerous weight and facing physical struggles he could no longer ignore.

But the truth had been creeping in long before. He recalled a doctor’s visit back in 2019, when a nurse casually mentioned he weighed 346 pounds. Her offhand remark about his size left a lasting impression—and an internal sting he couldn’t shake. Embarrassed and frustrated, he avoided checkups altogether for years.

Scare on Thanksgiving Weekend

It wasn’t until Black Friday 2023, while eating Thanksgiving leftovers with family and friends, that Carroll hit a breaking point. A sudden health scare that felt like a heart attack jolted him into action. The experience left him terrified, shaken, and determined never to feel that close to death again.

Fast Food, Slimmer Future

Carroll’s secret weapon? Chick-fil-A’s Spicy Southwest Salad. He started eating the same 680-calorie meal every day for lunch: a colorful mix of greens, black beans, corn, grilled chicken, and a creamy salsa dressing. It became his dietary anchor—his go-to fuel for shedding the pounds.

On Sundays, when Chick-fil-A was closed, he’d stock up ahead of time or recreate the salad himself. His other meals were minimal: usually yogurt and fruit in the morning, or nothing at all if he skipped breakfast. Junk food, soda, and alcohol were all cut from his diet.

From Out of Breath to Back in Shape

At his heaviest, everyday tasks were exhausting. Stairs were a struggle, airplane seats felt suffocating, and finding clothes that fit comfortably was a challenge. But as his weight dropped, so did those barriers. He joined a gym, focused on fitness, and stayed committed to his limited but nutritious meal plan.

By the end of 2023, he had dipped under 300 pounds. By the following July, he was down to 228—more than 130 pounds lighter and holding steady with no rebound.

Did You Know?

  • Chick-fil-A’s Spicy Southwest Salad is one of the chain’s most calorie-dense salads, but it remains a popular choice for high-protein, low-carb diets (Chick-fil-A Nutrition Guide, 2024).
  • According to the CDC, nearly 42% of U.S. adults were classified as obese in 2020, with Rhode Island ranking slightly below the national average (CDC, 2022).
  • Intermittent fasting and meal repetition are strategies shown to improve weight loss consistency by reducing decision fatigue and stabilizing caloric intake (Harvard Health, 2023).

Moment for Reflection

Change doesn’t always begin with perfection—it often starts with one honest moment, one meal, or one step in a new direction. Like Tom Carroll, we all carry burdens that feel too heavy at times. But even the most unlikely path can lead to healing when we stay faithful to it. With each small act of discipline, we’re reminded that renewal is always within reach—and grace is big enough to meet us at the drive-thru.
