ST. PAUL, MN – Mornings in our house are a whirlwind. My hubby Jack is always trying to squeeze in just five more minutes of sleep, while Iām busy making sure everything is ready for the day ahead. Itās chaos. But one thing that keeps us sane (and well-fed) is a great breakfast casserole. My bestie Julie from Edina, Minnesota swears by her recipeāitās a lifesaver for busy mornings. Her kids and husband absolutely love it, and now itās a go-to in our house too.
The best part? These casseroles can be made the night before, so all you have to do is pop them in the oven. Whether youāre feeding a big family or just want leftovers for the week, these recipes are perfect. Here are a few tried-and-true options that Minnesota moms (and Julie) canāt get enough of.
1. Julieās Famous Sausage and Egg Casserole
This hearty casserole is perfect for anyone who loves a classic breakfast. This is our fave!
Ingredients:
- 1 lb breakfast sausage
- 6 large eggs
- 2 cups milk
- 1 tsp salt
- 1/2 tsp pepper
- 6 slices of white bread, cubed
- 1 cup shredded cheddar cheese
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook the sausage in a skillet over medium heat until browned. Drain any excess grease.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Layer the bread cubes in the greased baking dish. Spread the cooked sausage over the bread.
- Pour the egg mixture over the top and sprinkle with cheese.

- 1 small onion, diced
- 2 cups fresh spinach
- 8 large eggs
- 1 cup milk

- 1/4 tsp pepper
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
Instructions:
- Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish.
- Heat olive oil in a skillet over medium heat. SautƩ the bell peppers and onion until softened. Add spinach and cook until wilted.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Spread the cooked veggies in the greased baking dish. Pour the egg mixture over the top.
- Sprinkle with mozzarella and feta cheese.
- Bake for 30-35 minutes, or until the eggs are set. Let cool slightly before slicing.
