ST. PAUL, MN – Last weekend, Jack and I hosted a little fall gathering with some friends here in southern Minnesota. There’s something about this time of year that makes you crave cozy meals, warm drinks, and the smell of pumpkin spice in the air. We set out a few pumpkin-themed treats, and I have to say, they were a hit!
If you’re looking for comforting, simple dishes to share with your loved ones this fall, these pumpkin recipes will surely warm your soul.

Spiced Pumpkin Soup for Chilly Nights
One of the most comforting things you can make with pumpkin is a rich, spiced pumpkin soup. It’s perfect for those chilly evenings when you want something warm and satisfying but don’t want to spend all day cooking.
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can (15 oz) pumpkin puree
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon ground cumin
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- Optional: chili flakes for some heat
Instructions:

- 1 1/2 cups all-purpose flour
- 1 tablespoon sugar

- 1/2 teaspoon ground ginger

- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt

- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, baking soda, and salt.
- In another bowl, combine the pumpkin puree, eggs, oil, and vanilla.
- Add the wet ingredients to the dry ingredients and stir until smooth.
- Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick comes out clean.
- While the bars are cooling, prepare the frosting by beating together the cream cheese, butter, vanilla, and powdered sugar until smooth.
- Once the bars are cool, spread the frosting evenly over the top. Cut into squares and serve!
