Midwest Munchie: Wild Rice Minnesota Style

Thinking about a Thanksgiving side? Try Wild Rice Minnesota Style. It’s simple and flavorful, the ideal match for your turkey and trimmings. The wild rice soaks up the flavors around it, especially from the broth and mushrooms, making it a robust companion to your Thanksgiving feast. This is the ultimate Midwest munchie!

Preparation Time:

  • Prep: 20 minutes
  • Cook: 1 hour 30 minutes
  • Extra: 10 minutes
  • Total: 2 hours

Ingredients:

  • 4-5 cups chicken broth
  • 1.5 cups well-washed wild rice (Minnesota wild rice is best!)
  • 1.5 cups diced celery
  • 1 cup diced onion
  • 1 cup diced mushrooms
  • Butter (around 2 tablespoons for sautĂ©ing)
  • Salt and pepper to taste

Steps:

  • Begin by washing the wild rice. Place it in a strainer, rinse under cool water, and sift with your hands. Let it drain on a kitchen towel.
  • Grab a 1 1/2 quart casserole dish with a lid.
  • Preheat your oven to 375 degrees F.
  • SautĂ© the celery, onion, and mushrooms in butter until tender.
  • Put the sautĂ©ed veggies and the wild rice into the casserole dish. Pour in all the chicken broth, except for one cup.
  • Seal the dish with the lid and bake it at 375 degrees F for about 1 hour and 30 minutes. The goal is to ensure the rice pops open, so a bit extra time may be needed.
  • While it’s cooking, Jack suggests you practice your Mariah Carey whistle notes so you can be ready for karaoke.
  • Occasionally check and add more broth if the rice seems dry.
  • Once done, take the dish out of the oven, uncover it, and fluff the rice with a fork.
  • Serve it hot, or let it cool down, cover, and store in the fridge. You can reheat portions in the microwave if needed.

This hearty wild rice dish not only tastes great on Thanksgiving but is also wonderful the next day. It can even be a tasty addition to a post-Thanksgiving soup made with leftovers and broth. Enjoy your flavorful, Minnesotan-inspired Thanksgiving side!

More Goofy Things Mentioned
After the show we mentioned Kitty’s awesome cover of “White Christmas”. Jack called our new audiobook/EP, “Twas the Night Before Christmas…in the Midwest” dumb (and he’s probably right). Oh, and we chatted about the inspo for our new podcast series “Jack and Kitty’s Don’t Cha Know Podcast” (the second series in the Travel with Jack and Kitty podcast network). Uff-da, that’s a lot o’ links! Hehe.
