Rochester, MN – The United States Department of Agriculture (USDA) has announced that it’s conducting three separate studies to ensure the safety of beef in light of the spreading H5N1 bird flu virus. This virus has been detected in dairy cattle, raising concerns in the Midwest and across the United States about the potential contamination of beef products.

🔬 Testing Ground Beef from Grocery Stores
One of the studies involves sampling ground beef from grocery stores in states where dairy cattle have tested positive for the H5N1 avian influenza virus. The USDA wants to make sure that the beef you buy at your local supermarket is free from any traces of this virus.
🐄 Sampling Muscle Tissue from Sick Cows
In addition to testing ground beef, the USDA is also taking samples of muscle tissue from sick cows that have been removed from their herds. This will help them determine if the virus is present in the meat of infected animals.
🍳 Cooking Studies to Determine Virus Survival
The USDA is also conducting cooking studies to see how much of the virus, if any, survives under different cooking temperatures. They’ll be using a “virus surrogate” to inoculate ground beef and then cook it at various temperatures to see how much of the virus is killed in the process.
🌎 International Concerns and Restrictions
The safety studies come in response to Colombia placing restrictions on beef and beef products from US states where dairy herds have tested positive for avian influenza. The US Beef Export Foundation has called these restrictions “scientifically baseless,” as the US is Colombia’s largest beef supplier, with exports worth around $40 million last year.
🧫 Advanced Testing Methods
To detect any presence of the virus, the USDA is using polymerase chain reaction (PCR) testing, a highly sensitive lab test that can identify even the smallest traces of inactive genetic material from the virus. If any samples come back positive, they’ll be further analyzed for live virus.

Despite the ongoing studies, the USDA remains confident that the meat supply is safe for consumers. They emphasize their rigorous meat inspection process and the multiple safeguards in place to protect public health. As always, the agency recommends that consumers properly handle raw meats and cook them to a safe internal temperature to kill any bacteria or viruses that might be present.
