ST. PAUL, MN – Earlier this month, Jack and I hosted a dinner party. We invited friends over, cooked a feast, and had a great time. But afterward, we found ourselves swimming in leftovers. You know that moment when you open your fridge and see stacks of containers? That was us for the next few days!

Instead of eating the same meal over and over, we got creative with our lunches—and it turned out to be fun! So, if you’re ever faced with a fridge full of leftovers, here are five of my favorite ways to revive them and make them exciting again!

Stew. Leftovers taking over your fridge? Here are 5 genius ways to turn them into something fresh, fun, and delicious!

1. Stir It Up into a Soup or Stew

One of the easiest ways to give leftovers a second life is by tossing them into a soup or stew. It doesn’t matter if you have leftover veggies, meat, or rice—just toss it all into a pot with some broth, and you’ve got a whole new dish. Soup’s great because it lets the flavors blend together, creating something entirely different from the original meal.

Pro Tip: To thicken your soup, add a bit of flour, cornstarch, or mashed potatoes. And don’t forget to season it with a little extra salt, pepper, or herbs. You’ll be surprised how different things can taste with a fresh kick of spice!

2. Give It a Makeover with a Stir-Fry

Got some veggies and protein lying around? Stir-fry is your best friend! Heat a pan, toss in your leftovers with a splash of oil, and stir until heated through. Add some soy sauce, garlic, and ginger, and suddenly, last night’s sad-looking leftovers become a savory, delicious meal. It’s super fast and can turn almost any leftover into something new and tasty.

Bonus Tip: If you’ve got leftover rice, toss that into the stir-fry for a filling, flavorful meal. Just be sure to break up the rice before adding it to the pan, so it doesn’t clump.

3. Wrap It in a Tortilla or Lettuce

When Jack and I had our fridge full of leftovers, one of our go-to tricks was turning everything into wraps. Almost anything tastes good stuffed in a tortilla or wrapped in a crisp lettuce leaf! Whether it’s leftover chicken, beef, or even roasted veggies, just heat them up, throw them in a wrap, and add your favorite sauce.

Top Tip: Sriracha, salsa, or even a simple ranch dressing can elevate the flavors of whatever you’re wrapping up. It’s an easy way to make leftovers exciting again.

4. Bake It into a Casserole

There’s something about a casserole that just screams comfort food. Leftovers can become cozy meals just by layering them into a casserole dish, adding some cheese or breadcrumbs, and baking them until bubbly. It’s the perfect way to make something hearty and satisfying out of yesterday’s meal.

Quick Idea: If you’ve got leftover chicken, rice, and veggies, mix them with a can of cream of mushroom soup, sprinkle some cheese on top, and bake until golden brown. Trust me—it’ll taste like a whole new meal!

5. Turn It into a Frittata or Omelet

Leftovers for breakfast? Why not! One of my favorite tricks is turning leftovers into a frittata or omelet. Just whisk up some eggs, toss in your leftovers, and cook until set. It’s a great way to use up meat, veggies, and even pasta. Plus, it makes for a filling, protein-packed meal that works for breakfast, lunch, or dinner.

Pro Tip: For a frittata, you can cook everything on the stove first and then pop it into the oven to finish baking. It’s a little fancy but super easy to pull off!

Saves Money – and Tastes Great!

Don’t let your leftovers go to waste! With a little creativity, you can turn yesterday’s meal into something fresh and exciting. These five tricks have saved me and Jack more times than I can count, and they’ve even inspired some of our favorite dishes. Plus, getting creative with leftovers is a great way to save money and reduce food waste.
